Description:
Watermelon Wheat is a classic wheat beer recipe that is given a fruity twist by adding watermelon flavoring. The ABV for Watermelon Wheat is 4.8-5.3%.
Ingredients:
Fermentables
6.6 lb. Wheat Liquid Malt Extract
Grains
8 oz. Carapils
8 oz. Wheat
Hops
1 oz. UK Golding
Fruit Flavoring
4 oz. liquid Watermelon flavoring
Yeast
1 Sachet
Directions:
1. Heat 2.5 gallons of water to (150-165F.)
2. Add grains to muslin bag and steep for 20-minutes.
3. Remove grain bag and discard.
4. Bring the wort to a rolling boil.
5. Add 3.3 lb. of the LME (liquid malt extract.) Stir it in slowly so that it doesn’t burn.
6. Add the UK Golding hops.
7. Boil for 45 minutes.
8. Add remaining 3.3 lb. of LME.
9. Boil 15 minutes.
10. Cool the wort to approximately 70F.
11. Once its cool, add the wort to your brewing bucket.
12. Top it off with enough clean water (64-72F) to bring the water line to 5-gallons.
13. Add the yeast, and stir before putting the lid and airlock on the bucket.
14. Fill the airlock halfway with either water or Vodka.
Additional Tips
1. On bottling day, dissolve 3/4 cup of corn sugar in 16 oz. water for 5-minutes.
2. Add to the bottling bucket along with the 4 oz. of Watermelon flavoring.
3. Keep your bottles between 64-72F to ensure proper maturation.

This Watermelon Wheat recipe produced a beer that had a rich amber hue with a very frothy light oatmeal head. You can smell the watermelon the nose. The beer is good, but the watermelon additive is too strong. It leaves a funky Jolly Ranch type flavor that gets worse over time. The beer is drinkable, but definitely a failure!
