Description:
This Oktoberfest recipe produces a traditional Oktobefest with a rich malt aroma and flavor. This is a classic malt beer which is both soft and complex.

Ingredients:
Malt Extract
6 lbs. Briess Light LME

Grains
8 oz. Crystal 40L
8 oz. Munich Malt

Hops
1 oz. Mt. Hood Hops (35-minutes)
1 oz. Hallertau Hops (15-minutes)

Yeast
Oktoberfest Yeast

Directions:
1. Bring 3.5 gallons of water to around 155F.
2. In a mesh bag, steep grains for 30-minutes.
3. Remove grain bag, do not squeeze.
4. Mix in malt extract to the hot water.
5. Bring pot back to a boil and boil for 1-hour.
6. Add the Mt. Hood hops in the last 35-minutes in the 1-hour boil.
7. Add the Hallertau hops in the last 15-minutes of the 1-hour boil.
8. Cool the wort to around 80F.
9. Pour cooled wort into the fermentation bucket and top off with water to 5-gallons.
10. Pitch the yeast and cover.
11. Ferment around 55F to lager it for 2-3 weeks.

Additional Tips
1. On bottling day, dissolve 3/4 cup of corn sugar in 2-cups water.

This Oktoberfest recipe has a nice caramel reddish hue with a small head. The beer is very aromatic, as it’s sweet and a little nutty. The beer is soft at first with nice carbonation and flavors of caramel, malt and slight grain come to the forefront. Overall this is a solid Märzen!
