<p><strong>About the Brewery</strong><br>Garrett Marrero and Melanie Oxley founded the Maui Brewing Company in 2005 in Kihei, Hawaii. The Maui Brewing Company is currently the largest craft brewing company in Hawaii and has a reputation for being innovative and fiercely local. The duo has also opened four brewpubs in Kihei, Lahaina, Kailua and Honolulu.</p>



<p><strong>Beer Reviews:</strong><br><em>Tobin&#8217;s Review 4 out of 5</em><br>Maui Brewing Coconut HIWA Porter has a dark black hue with a nice deep beige head. I pick up aromas of caramel and burnt sweet grain. The mouth is slightly dry with flavors of soft light burnt caramel mocha and a slightly dry licorice. It ends dry, but super tasty. It almost has a light brownie flavor. </p>

<p><strong>About the Brewery</strong><br />
Francis Xavier ‘F.X.’ Matt came to the US from Germany in 1878, where he began working for Carl Bierbauer’s Columbia Brewery. In 1888, he would transform the Bierbauer Brewery into the West End Brewing Company. Prohibition was enacted in 1920 and the brewery would survive this terrible time in American history by producing Utica Club soft drinks. When Prohibition ended in 1933, the West End Brewing Co. was the first in the nation to obtain a license and to sell beer.</p>
<p>In 1980 F.X. Matt II would become president of the brewery and rename the F.X. Matt Brewing Co. in recognition of his grandfather. The brewery is now known as the Matt Brewing Company and it is the 4th oldest family-owned brewery in the US. Its most popular beer is Saranac.</p>

Mississippi Mud Black and Tan has a dark brown hue with a hint of gold and a nice beige head. The beer has a slight coffee aroma with smooth caramel mocha grain flavor. Overall, it&#8217;s a delicious beer with almost a hint of peanut butter. I enjoyed this one!</p>

Stone Smoked Porter with Chipotle Peppers has a deep brown hue with a rich tan head. The beer has aromas of roasted malts, pepper, cocoa and a unique smokiness imparted by both peat-smoked malt and chipotle peppers. The flavors are a nice blend of malts, coffee and dark chocolate with a pronounced chipotle smokiness. Overall the beer is smooth with a nice spicy heat. The ABV for Stone Smoked Porter with Chipotle Peppers is 5.9%.</p>

<p><strong>About the Brewery</strong><br />
In 1996, Steve Wagner and Greg Koch founded the Stone Brewing Company in San Marcos, California. Nine years later the pair would relocate their brewery to Escondido. Currently the brewery operates on the west coast, but also has a brewery in Richmond, Virginia on the east coast. Stone Brewing has seen dynamic growth as they operate a number of taprooms and restaurants, their beers are available in all 50-states as well as 40+ countries worldwide!</p>

<p><strong>About the Brewery</strong><br />
In 1990, Richard Squire founded the Breckenridge Brewery, which was the third-oldest craft brewery in Colorado. It didn’t take long for the brewery’s popularity to grow, and they opened up a location in Denver to keep up with demand. In 2015 Anheuser-Busch InBev acquired the brewery as part of its high end craft and import beer brand unit. The brewery’s current headquarters are in Littleton, CO and the deal with Anheuser-Busch InBev has allowed them to expand their distribution to 42 US states.</p>

<p><strong>Description:</strong><br />
One-Eyed Jack&#8217;s Robust Porter Recipe will produce a pitch black porter with flavors of dark roasted malt, toasted caramel, toffee and a mocha-and-coffee cream finish. The ABV for One-Eyed Jack&#8217;s Robust Porter is 7%.</p>
<p><strong>Ingredients:</strong><br />
<em>Fermentables</em><br />
7.7 lbs. Dark Syrup Malt</p>
<p><em>Grains and Wort Additives</em><br />
8 oz. 90L Crystal Malt (crushed)<br />
8 oz. Special Roast Malt (crushed)<br />
12 oz. Chocolate Malt (crushed)<br />
4 oz. Black Patent Malt (crushed)<br />
4 oz. Roasted Barley (crushed)</p>
<p><em>Hops</em><br />
1 oz. Columbus Hops (Bittering, 60-minutes)<br />
1/2 oz. Kent Golding Hops (Bittering, 60-minutes)<br />
1/2 oz. Kent Golding Hops (Bittering, 30-minutes)<br />
1/2 oz. Willamette Hops (Flavor, 10-minutes)<br />
1/2 oz. Willamette Hops (Aroma, 1-minute)</p>
<p><em>Yeast</em><br />
Liquid Yeast- Wyeast 1187 Ringwood Ale Yeast or&#8230;.<br />
Liquid Yeast- Wyeast 1098 British Ale Yeast or&#8230;..<br />
Dry Yeast- Safale S-04 Yeast</p>
<p><strong>Directions:</strong><br />
1. Place crushed grains in a large muslin bag and add to 2-gallons of water.<br />
2. Heat the water temperature to 150-170F, and steep for 30-minutes within this temperature range.<br />
3. Remove and discard the grains, and bring the mixture to a boil.<br />
4. Remove the pot from the heat and stir in the malt extracts to prevent burning.<br />
5. Bring mixture back to a boil.<br />
6. Once boiling add 1 oz. Columbus hops and 1/2 oz. Kent Golding hops and boil for 60-minutes.<br />
7. With 30-minutes remaining in the 60-minute boil, add 1/2 oz. Kent Golding hops.<br />
8. With 10-minutes remaining in the 60-minute boil, add 1/2 oz. of Willamette hops.<br />
9. With 1-minute remaining in the 60-minute boil, add the final 1/2 oz. Willamette hops.<br />
10. At the end of the 60-minute boil, chill the wort to 75F.<br />
11. Add your chilled wort to 2-gallons of water already in your fermenter.<br />
12. Add any additional water to bring the total volume in the fermenter to 5-gallons.<br />
13. Place the lid on the bucket and aerate the wort by swirling the bucket to mix in oxygen.<br />
14. Once done, pitch the yeast and seal the fermenter. (You want to keep the temperature between 70-78F).<br />
15. Once fermentation begins maintain a temperature between 62-72F.</p>
<p><em>Additional Tips</em><br />
1. On bottling day, dissolve 3/4 cup of corn sugar in 16 oz. water.<br />
2. Keep your bottles between 62-75F to ensure proper maturation.</p>

One-Eyed Jack&#8217;s Robust Porter recipe produces a super dark stout looking beer with a nice caramel colored head. The beer resembles more of a stout than a porter, as it&#8217;s bitter. I pick-up aromas of toasted grains on the nose. The beer is smooth with a little bit of a bitter end. The flavors are similar to burnt chocolate, but creamy as well. Overall it&#8217;s not a bad beer, but I would prefer a different style of porter.</p>

Deschutes Black Butte Porter has notes of rich chocolate and coffee. It has luscious creaminess and a roasted finish. The beer is comprised of Pale, Carapils, Chocolate, Crystal and Wheat malts with Cascade, Bravo and Tettnang hops. The ABV for Black Butte Porter is 5.2%.</p>

Porters are best served in a traditional 16-ounce pint glass.</p>
<p><strong>About the Brewery</strong><br />
The Deschutes Brewery was founded in 1988 by Gary Fish. The brewery is located in downtown Bend, Oregon and is named after the Deschutes River. In its first year of operation, the brewery sold 310 barrels and had scaled to 3,954 barrels in 1992. As a result of the increased growth, they were forced to expand the brewery in 1993. The Deschutes Brewery now consists of one brewing facility and three brewpubs with one located in Portland’s Pearl District and another on the east coast in Roanoke, Virginia.</p>

Deschutes Black Butte Porter has a dark chocolate hue with a small light toffee colored head. The beer bursts with aromas of dark chocolate with a smooth light chocolate taste. It looks heavy, but is actually lighter with tastes of malt and chocolate.</p>
